Wow, it has been a while since I have been in your inbox! This fall was hectic, to say the least. We moved, got married, and went on our honeymoon... a perfect fall, but we had a lot on our plates. I want to get back to sending you recipes and health tips weekly, so thanks for sticking around!

As the holidays approach I know cooking can feel daunting so over the next month I am going to focus on simple recipes that are nourishing and delicious.

Below are 3 recipes that I have had on repeat for SIMPLE dinners during the week.

Instant Pot Chicken Stew

A comforting dish made with tender chunks of chicken simmered in a rich, creamy broth. Seasoned with aromatic herbs and vegetables like carrots, peas, and onions, it offers a hearty and delicious meal perfect for chilly evenings.

Apple Pecan Salad

It's simple, yet the perfect combination of flavors that combines fresh seasonal ingredients, and wholesome ingredients for a nutritious meal or side. I love adding leftover steak or chicken to make it a full meal.

Mississippi pot roast

A flavorful, fall-apart meat that everyone will love. It is cooked low and slow in the crockpot which results in a succulent and savory roast with a hint of tanginess from the pepperoncini peppers. Perfect for meal prepping!
